fo CHEESE CROQUETTES | (n 3oz of grated rfl {jj cheese, cayenne, pepper , \ob rd [)| * ' of cornflour, frying fat , the Jfl (jj whites of two eggs, pinch of salt, n] pJ Put the whites of eggs into m S ru basin with a pinch of salt and beat ft! to a stiff froth. Stir in the corn - “j n] flour gradually , add the grated «] a] cheese and cayenne. Make som* p] fat hot in a deep saucepan , and j/j when a faint blue smoke begins to K rise drop in teaspoonfuls of the Dj hj mixture. Lower the heat under K in the pan.'or draw the pan to one |}l iji side of the fire and fry for about q| Ln fire minutes, or until pale brown fjj E and cooked through. Take up on pJ * perforated spoon, drain on soft rd paper , dish on a lace paper on a p] rjJ hot dish piled neatly on each other. n] ru Sprinkle with orated cheese and gj j ru serve immediately. =]
