INTERESTING WAYS OF SERVING POTATOES
Potatoes au Gratin. —Sieve lib of; cooked potatoes, season, stir in 1 oz of ; butter, 1 gill of hot milk, and a beaten I egg. Put into a buttered fireproof i dish, sprinkle thickly with grated | cheese, pour over a spoonful of oiled | butter, and brown in the oven or under a griller. Savoury Potatoes. Cut lib. of peeled potatoes into slices about 1-8-i inch thick. Put them into a pan with 2oz of grated cheese, salt and pepper. I Just cover with stock and cook gently for 20 minutes. Drain and turn into a fireproof dish, sprinkle with grated j cheese and brown.
