To-day’s Recipe VEGETABLE MARROW GINGER ■j-y INQUIRED: One 'vegetable marrow, Ilb of sugar, $-pint of water, and 102 of whole ginger to each pound of marrow weighed after seeding. Teel the marrow, remove the seeds, and weigh the vegetables, then cut if into cubes. Tut the sugar and water into a pan, stir until the former has melted, then boil to 230 deg. Fahr., or the thread degree. To test without a thermometer, dip a piece of stick into cold ivater, then into the syrup, and bach into the water. Tincli the syrup adhering to the stick between the thumb and finger, and draw them apart, when a thread should form which snaps very easily. Tut the bruised ginger and pieces of marrow into the boiled sugar, and simmer until the marrow looks clear . Tut it aside for 24 hours, then strain off the syrup and boil it up again to the thread degree. Met urn the marrow and ginger to the pan and boil for an hour . Again leave until the following day, then repeat the process. Take out the ginger and put the marrow and syrup into pots. Cover like jam.
