STUFFED BAKED TRIPE K £vELECT a piece of thoroughly [n cleaned tripe wide enough to fold over. Male a stuffing K with onions , sage and bread [rj crumbs seasoned with pepper and K salt and a little finely-chopped K lemon skin; bind with a little K butler or dripping. Smear a thick jjj layer of this on half the tripe, 3 then fold the other half over as 3 you would pastry for a tart. Sew 3 up the sides to keep in the stuffing. rO Put in a dish and bake for about t 3 two hours (sometimes it takes a >0 little longer). Serve very hot with r{] a good brown sauce. «]
