APPLE AND CINNAMON CAKE P, EE VASE the filling. ‘-Ate* j must be quite cold before j being used . Cook four or five \ sliced apples in a little water, j and when cooked mix in a little j butter and two tablespoons sugar; add half teaspoon cinnamon and one teaspoon spice . Mix 2os sugar and 2os butter to a cream . add one egg and beat well, then add one cup sifted self-raising flour. Lift on to floured board and knead slightly, roll to a very thin sheet and line a well-greased sandwich' tin with it. Spread stewed apple on very thickly; a few sultanas may be added. Put over top of apples a cover of the mixture rolled very thin, brush over the top with white of egg or egg milk, mark into oblong or diamond shapes with a sharp knife and sprinkle cinnamon and sugar over . Bake in a moderate oven. When cold sprinkle thickly with icuigsugar.
