Prune Mould
This is a delicious sweet either for lunch or supper. To make a mould of “family” size you need a pound of prunes, and these, after being carefully washed under the tap, should be soaked overnight in cold water. It is a good plan to split each prune and take out he stone before soaking. Next day put the prunes into a pan with a pint and a-haif of cold water, a quarter of a pound of brown sugar, the juice of a fairly large lemon and the shredded rind, and let ail simmer together for nearly half an hour. Dissolve an ounce of gelatine in a tablespoonful of warm water, and add this to the pan, mix it up well, take out any large pieces of lemon rind, and drop in a very little cochineal. Rinse out a mould with cold water, pour into it the contents of your saucepan, and put in a cold place to set.
