MONDAY’S CASSEROLE Cold roast beef, two scraped carrots, two peeled onions, half ot butter, two finely-sliced raw potatoes, one clove of garlic, half tear spoon finely-minced parsley, one teaspoon salt, one pint white stock, three tomatoes, nutmeg. AU meat left from Sunday's joint is cut in half-inch squares, slice carrot and onion finely, heat butter in a saucepan, add vegetables, and brown gently for ten minutes, stirring occasionally. Add potatoes, brown five minutes, add crushed dove of garlic, parsley, salt, paprika, a saltspoon grated nutmeg, tom* toes , peeled and roughly chopped* and the stock. Mix well, turn into casserole, cook 1$ hours. Add bee ft leave in oven 15 rzinutes, sorts with mashed potatoes. LITTLE APPLE CAKES Three cups flour, slb butter, one cup sugar, tuo teaspoons cream of tartar, one teaspoon bicarbonate of soda, two eggs, a little mut. Sift flour, cream of tartar end soda; add sugar and rub in Mix with eggs (well beaten) and the milk. Knead , roll out ****** and cut with plain or fancy Put the rounds into greased potty tins, then put a little stewed apf** on each one and place anotndt round over the top of the a Bake in moderate oven to 15 minutes. When cold, sprxns with icing sugar.
