PRUNE MOULD & rj-i O make a mould of family 9§ m J size you need Ilb of prunes, H and these , after being caretl f ully washed under the tap, should U m be soaked overnight in cold water. US It is a good plan to split each 51 prune and take out the stone M before soaking.. Next day put the p P prunes into a pan with a pint and PI a-half of cold icater, a quarter of M y a pound of brown sugar, the juice J| m of a fairly large lemon , and the f o shredded rind, and let aU simmer sja y together for nearly half an hour. M M Dissolve an ounce of gelatine in a M * tablespoonful of warm water , and jrj add this to the pan. • Mix it up m H well, take out any large pieces of p P lemon rind, and drop in a very {.?; M little cochineal. 'Rinse out a mould y with cold water , pour into it the R m contents of your saucepan, and fj put in a cold place to set.
