Cut with a sharp knife a ring round the middle of each orange, insert a spoon-handle under the peel and work off the skin; then halve the oranges crosswise and remove the pips. Set the oranges in a pie-dish with the tapioca, sugar and marmalade, fill the top of dish with cold water and balce for three-quarters of an hour; the oranges will be beautifully soft and the tapioca like jelly. Put a little marmalade on top of each orange and serve hot or cold. ummmmmm
