PRUNE MOULD
This is a delicious sweet either for lunch or supper. To make a mould of family size you need lib of prunes, and these, after being carefully washed under the tap, should be soaked overnight in cold water. It is a good plan to split each prune and take out the stone before soaking. Next day put the prunes into a pan with a pint and a-half of cold water, a quarter of a pound of brown sugar, the juice of a fairly large lemon, and the shredded rind, and let all simmer together fo nearly half an hour. Dissolve an ounc of gelatine in a tablespoonful of warn water, and add this to the pan. Mi: it up well, take out any large piece of lemon rind, and drop in a very littl cochineal. Rinse our a mould wit" cold water, pour into it the contents o your saucepan, and put in a cold plac to set. When boiling artichokes, a few drops of vinegar in the water will kei them white. When making gingerbread make some coffee and use instead of water. * * * Keep your knitting-needles and crochet-hooks in a box with plenty o: powdered starch and they will not rust.
