BUTTER AND CHEESE

AUCKLAND’S PRIMARY PRODUCTS A FINE EXHIBIT One of the outstanding sections of the exhibition is that devoted to the dairy and agricultural products of the district. The cheese section is not hard to find, an appetising aroma leading visitors to the end of shed No. 12, where row upon row of this important product makes an impressive showTlie importance of this industry to the province and the necessity of maintaining the high standard already set by exporters has been fully realised by the committee, and quite a large portion of the prize schedule lias been set aside for it. As with the butter classes grading competitions have also been held. The butter classes have also attracted large entries, most of the principal factories in the province, as well as from other parts of the North Island, being represented. The judging, which was carried out by members of the dairy division of the Department of Agriculture, was supervised by Mr. J. O’Dea, grader of Wellington. Referring to the standard of the exhibits, Mr. O’Dea said that a high standard of quality, make and finish was noticeable right through the whole exhibition. “In the butter classes, the entries of which were held in cold store for three months, the keeping qualities were splendidly maintained. Flavours were brisk and sound, bodies and textures firm and close, and the general finish excellent. “In the cheese section the entries were well up to show standard,” stated Mr. O’Dea. “Flavours were bright and. clean, textures close and bodies meaty.” He considered that the makers were to be congratulated on the high standand of general excellence shown in the respective exhibits. In tho farm and produce setion the Auckland Province lias shown that it takes second place to none in the growing of root crops. With the rapid increase ’of the dairying industry throughout the province this is indeed an important phase of the agricultural activity of the district, and one that obviously is not being neglected.
