KIDNEY STEW i Keqni-ed: 1 ox-kidney, loz of J four, one onion, one bunch of X herbs, 1 so£ of dripping, salt y 7 pepper, one gdl of stork or water, sir large potatoes. JL Remove all skin and core from hi the kidney, and cut it into small $ pieces. Mur the flour, salt and pepper on a plate and coat the T pieces of kidney with the mixture. Melt the dripping in a pan, and T when hot, put in the pieces of kid- £ ne H fry brown. Drain off the -h fat. sprinkle in any four left T over, and stir in the water. Stir <4 uxtxl boiling , and if too thick add jg more water. Pvt in the sliced 7 onion and herbs (a spray of parsi°y> a sprig each of thyme and T marjoram, and a bay leaf tied 7 together). Skim, add the potatoes $ peeled . and cover the pan. Simmer X until the potatoes are soft, but *ot broken. T To Dish.—Arrange ihe potatoes £ round the dish in <i circle and jF pour the kidney and gravy in the 7 centre. Remove the herbs. CREAM TAPIOCA -f SoaX: one teacup of tapioca in «*» Water all night. In the morning X P°* r off. and put the tapioca in 7 one pint of boiling milk; boil 10 T minutes. Beat the yolks of three £ e 99*. with three tablespoons of T sugar, three tablespoons of grated coconut; stir in, and boil five «L minutes. Pour this into a piedish, cover with the whites of the e 99*j beaten stiffly and sweetened. sprinkle coconut over, and place X oven to set. ANGELS FOOD Ten sheets gelatine, one quart I mdk, juice of three lemons, three $ e 9 one teacupful sugar, a few X drops essence of vanilla. Soak the 7 9elatm e in the milk for half an T Acntr, then gradually heat it over jL the fire, stirring well until dis - solved. Be careful not to let it $ Add the sugar, the yolks of he eggs well beaten, and the Y lemon juice. Bring the mixture 7 almost to boiling point. Then ♦ strain it into a dish and let it X When nearly cold add the 5 JHifly whipped white of cage and T the vanilla. Beat well together, 4 a»d povr into a mould to set. %
