JL Remove all skin and core from hi the kidney, and cut it into small $ pieces. Mur the flour, salt and pepper on a plate and coat the T pieces of kidney with the mixture. Skim, add the potatoes $ peeled . and cover the pan. Simmer X until the potatoes are soft, but *ot broken. T To Dish.—Arrange ihe potatoes £ round the dish in <i circle and jF pour the kidney and gravy in the 7 centre. Remove the herbs. CREAM TAPIOCA -f SoaX: one teacup of tapioca in «*» Water all night. In the morning X P°* r off. and put the tapioca in 7 one pint of boiling milk; boil 10 T minutes. Beat the yolks of three £ e 99*. with three tablespoons of T sugar, three tablespoons of grated coconut; stir in, and boil five «L minutes. Pour this into a piedish, cover with the whites of the e 99*j beaten stiffly and sweetened. sprinkle coconut over, and place X oven to set.
