ORANGE CAKE

Beat 2oz. of butter and 4oz. of castor sugar to a cream, add 2 eggs, one by one, and the grated rind of an orange. Stir in of flour sieved with a good teasoonful of baking powder and a pinch of salt alternately with the strained orange juice and a gill or more of milk. Put the mixture into two sandwich tins, and bake in a moderate oven about 15 minutes, or until firm when pressed. Cool on a sieve and when cold spread one cake with whipped cream, sweetened a-nd flavoured with orange essence. Covpr this with orange sections from which all the white pith has been carefully removed, the pips being gently squeezed through a small hole irs the centre of each section. Press the second cake on the top, and cover this with more whipped cream and oranges.
