A DELICIOUS SAVOURY fi r a delicious and quickly-made savourj r which will prove very popular at a small luncheon or dinner party. You need two eggs, two tablespoonfuls of melted butter, a salispoonful of salt, a shake of red pepper, a teaspoonful of flour, three tablespoonsful of grated cheese fparmesan is the best), and a tablespoonful of cream. Beat the eggs to a cream; add butter, salt, pepper and cheese, and work the whole into a smooth paste. Now mix the flour well into the cream and stir into the mixture. Thoroughly beat together for one minute, spread the preparation evenly on buttered cracker biscuits, and put on the top shelf of a hot oven, to get slightly brown.

MEAT USED FOR BEEF-TEA NO NEED TO WASTE IT! The home cook does not quite know "hat to do wit!} "that tasteless stun" the meat that has been used to make beef-tea. And if she is a good economical housewife, it goes much against the grain to throw- it away. There is no need for her to err against her conscience! With a little trouble it can be metamorphosed into quite an appetising dish; excellent for breakfast or supper. Mince the meat and add a slice of bacon, chopped fine, also an onion, likewise chopMoisten the mince with a little beef extract, into which stir some curry powder and a little salt. The quantits' of curry powder must be decided, of course, by individual taste, as some people like it so much stronger than others. Put the mince mixture into a piedish and bake in a slow oven for a couple of hours. When cold, loosen with a knife, and turn out. Decorate with parsley. if the mince is fairly moist it will have an attractive and appetising glazed surface. Another way of using up such meat ;s to make rissoles w-ith it. After mincing, add a little chopped ham, onion, parsley, pepper and salt. Moisten with very thick brown gravy—just enough to bind. Thicken the gravy with ordinary flour for this pu--pose. Though an egg makes a nice addition it is not absolutely essential Allow the mixture to cool; then shape into rissoles. Flour, roll in egg and breadcrumbs, and fry a deep brown, j
