These meatless days are all very well in moderation, but I must say I enjoy a bit of meat sometimes.” “I know you do, Jim, but meat is such a bother to keep this weather. You know, the last joint I got went off before I could cook it.” ‘‘Yes, but how do other people manage? Look at that delicious piece of beef we had at the Mathesons’ the other Sunday night. And that must have been bought on the Saturday morning.” “I don’t know how Clare Matheson manages it, Jim. It's a mystery to me. I can't do it anyway. . . ” And yet Ethel could do it easily if she bought her meat at Hellaby’s, as Mrs. Matheson probably did. You see, Hellaby’s have a special way of chilling their meat before it’s distributed for sale. It’s not frozen, merely chilled in a temperature of 35 to 40 degrees. This checks the, natural change that begins in all meat immediately after it’s killed, the change which, if it is not checked, makes meat go bad. Of course, even Hellaby’s meat won’t keep indefinitely. But it does keep as long as fresh meat possibly can, and far better than any other meat sold in Auckland, although it costs you no more.
