MADE-IN-A-HURRY DISH

OU will appreciate this recipe when you are in a desperate hurry, and have only about half an hour in which to prepare a little luncheon dish. Required: 4oz. cooked ham, 1 onion, large knob of butter, 2 eggs. 3 tomatoes, seasoning. Shred the ham, chop the onion, and cut up the tomatoes. Place the butter in a saucepan over a gentle heat. As it begins to colour add the onion and tomatoes. Cook for five minutes, add the ham, and cook for another five minutes. Season. Remove from the gas and stir in the well-beaten eggs. Return over a gentle heat and stir till the mixture thickens, but take care not to allow it to become hard. Serve very hot on buttered toast.
