COCONUT WHIP

This is a cool dish for summer evenings, but one that contains no fruit: 1 dessertspoon of gelatine, 1 tablespoon cold water, 1 egg white, 1 cup boiling water, 3 tablespoons brown sugar, 1 tablespoon lemon juice, 2 tablespoons desiccated coconut. Soak the gelatine in cold water, add a cup of boiling water and stir until the gelatine is dissolved. Add sugar and lemon juice; strain and cool. Beat with egg-beater until frothy; add stiffly beaten egg white; mix in coconut and beat until thick. Set in usual mould.
