BRANDY SNAPS

All children are fond of brandy snaps, and yet we hesitate to allow the little folk to buy them because they are so frequently exposed for sale in a manner which makes their cleanliness uncertain. The following recipe for home-made brandy snaps will be found very wholesome and satisfactory. Melt 41b of butter, Jib of sugar and Jib of syrup in a pan; put 3£oz of flour and Joz of ground ginger into a basin and add the melted liquid. Have ready a greased baking sheet and pour the mixture all over very thinly. Bake in a rather cool oven and cut into oblong shapes. While still warm, roll the snaps round the handle of a wooden spoon and place carefully aside to cool.
