UNUSUAL APPLE DISHES

Spiced Apples.—Wipe and remove the cores from 6 good cooking apples, but do not peel them. Put them into a casserole, and insert in the centre of each 1 clove, \ blade of mace, a pinch of powdered nutmeg, and a teaspoonful of brown sugar. Pour round a gill of cider, cover the casserole, and bake in a moderate oven until the apples are tender, but not broken. Serve cold. Apple Balls. —Cut up 21b of apples, without peeling or coring them, and simmer them in a gill of water until soft. Hub through a sieve, add 4oz of brown sugar, % grated nutmeg, the grated rind of a lemon, 4oz of finely chopped raisins, and lib of breadcrumbs. Mix very well, and if too moist add more breadcrumbs. Roll into balls, coat with flour, and fry a golden brown in hot fat. Drain on soft paper, and dish on a d’oyley on a hot dish. Sprinkle with caster sugar, and hand custard sauce.
