NOT ENOUGH ACID
N.Z. LEMONS DEFICIENT
SQUASH-MAKERS PROSECUTED
The fact that New Zealand lemons are deficient in citric acid was the cause of the prosecution of Whittome, Stevenson and Co., Ltd., at the Police Court to-day. __ The company was charged with selling lemon-squash which did not come up to the fixed standard. Mr. V. N. Hubble, who prosecuted, said that two grammes of citric acid was required to be present in the fruit used for each 100 cubic centimetres of lemon-squash. The company had been using New Zealand lemons, which were deficient in acid, and they had written to the department asking that tests be made. While these investigations were going on they had continued to use their old recipe. Defendants were ordered to pay costs.
