Islands of Eternal Spring The Charm of Hawaii The .green islands of the South Seas ! have a charm and fascination all their own, and the desire comes to everyone to leave the heat and bustle for a quiet cruise—"round the islands.” Coral atolls, palm trees and fresh trade winds across the blue Pacific — what delightful dreams they conjure up to the mind, yet reluctantly we turn away, thinking that such delights are not for us. After all we had better visit those relatives down South. A new policy of the Union Steam Ship Company, however, is of such interest that it makes one pause to reconsider an island-trip holiday. This is the special excursion rates for a six weeks’ trip to Honolulu —the crossroads of the Pacific. Special cheap rates are advertised, and the trip is arranged to provide 11 days' travelling each way, calling at Suva, Fiji, both going and returning, and allowing nearly three weeks in Hawaii. If only one theme could be selected to explain the popularity and charm of Hawaii, it would lie in the much-over-worked word “climate,” for these islands have one of the most delightful climates in the world. It is an equable climate, varying only a few degrees throughout the year, but never rising above 85 degrees, and even this is tempered by trade winds off the ocean. The rainfall for the year is only about 16 inches, but this falls evenly throughout the whole year, and then generally at night. Honolulu itself is a cosmopolitan city with a great deal of the brightness of a modern city, placed in an exquisite natural setting and favoured with Nature’s finest in verdure, flowers, shade trees, healthful and equable climate. It has all the comforts and services of a modern American city, but more than that, and infinitely more appealing, the spell of Southern Seas and several broad hints of the Orient. For anyone wishing to escape the oppressive heat of a summer, what could be more delightful than to go to these romantic isles, where it is always a mild summer—never too hot and never cold. In Hawaii there is surfing all the year round, luxuriant tropical foliage, strange luscious fruits, gorgeous llowering plants, coral reefs and aquatic gardens—and always the trade winds blowing from the north-east over SO per cent, of the year tempering the warmer days. i Hawaii —the enchanted isle of eternal spring. MORE VARIED BREAKFASTS Breakfast, according to tlie leading doctors of to-day, is a meal that must not be slighted. Yet, as everyone knows, it is the most difficult meal of the day to properly tempt the appetite, particularly during the summer months, when a full breakfast of cooked meat cannot be faced. Something light and dainty, yet satisfying, is the problem. Most people eat the same thing day after day at. breakfast. Most people become tired of this monotony, and the appetite, refusing to be stimulated through lack of variety, rebels. And because of this, what you force yourself thus to eat often fails to nourish. Thus your craving for a “change” may be construed as Nature’s request for food that will, because of its deliciousness, or "difference,” be more readily digested and assimilated. That is why variety in the breakfast menu is so universally urged to-day —both for your appetite’s sake and for healths’ sake. With such an enormous number of different breakfast foods on the market, it should not be difficult to vary the breakfast menu sufficiently. Even the practice of taking month and month about with different foods is better than lazily preparing the same monotonous breakfast every day. SALAD DRESSING FOR SUMMER Salad dressings that will keep, no matter what the weather, are a blessing, and here is one that can be highly recommended: Cooked Mayonnaise Dressing.—Place in a bowl but do not beat or mix: Two egg yolks, half teaspoonful of dry mustard, one teaspoonful of salt, one cupful of oil, one teaspoonful of sugar, three tablespoonfuls of lemon juice, three tablespoonfuls of vinegar, or all lemon juice, or all vinegar. Meantime cook two tablespoontuls of butter with three tablespoonfuls of flour and when smooth add one cupful of hot water, and cook in a double boiler for 10 minutes. Turn this sauce into the first mixture and beat vigorously with a rotary beater until smooth and velvety. Keep in a cold place and when required add other seasonings as liked, a dash of cayenne for a fish or vegetable salad, or a tablespoonful of sugar and a cupful of whipped cream for a fruit salad. Chili sauce, grated onion, chopped olives, or Worcestershire sauce may be added for sake of variety.
Refreshing Beverages Cool Drinks for the Summer “Something cold to drink - ’ to most of us means, usually, one of the everpopular fruitades served icy and tempting on a warm afternoon or evening merely as a thirst-quencher. That something cold to drink can very well become almost a whole meal in itself, or the main portion of a meal, on a hot noontide, or that it may form the entire refreshment at an informal evening affair or at one of the many forms of summer entertainment, is not so familiar an idea, yet it is a very practicable and delightful one. Food beverages, as they may be called, are most appropriate for between-meal luncheons, when appetites flag in the summer heat, and if they are served in interesting glasses, accompanied by a straw or two, they will almost invariably be hailed with delight and partaken of with gusto. With the aid of them, the daily milk quota will easily be used. Many milk drinks, chilled deliciously, frothed to a pleasing airiness, topped with a bit of whipped cream, and served perhaps with a sandwich, will provide all the luncheon required either by way of refreshment or nourishment. The milk drinks are many and delicious. Milk shakes being the simplest form of this group, are easily varied, and always nourishing and refreshing. When making a cold drink of any type, a shaker will be found a most convenient utensil, but a quart or a half-gallon fruit jar titted with a reliable rubber ring and lid is a good substitute A supply of syrups, ready for immediate use, will greatly fa.cilitate the making of many cold drinks Even lemonade is improved if the sugar is added to it in the form of a syrup rather than in its raw state. An hour or two, therefore, will be well spent in the manufacture of the following syrups, which w r ill keep nicely in bottles or jars set in a cold place: Beverage syrup is made by dissolving one and a-half cupfuls of sugar in a quart of water, adding one-quarter of a teaspoonful of cream of tartar, and boiling the liquid without stirring for five to seven minutes Strawberry, raspberry, and other fruit syrups call for one cupful of granulated sugar, one cupful of water, and one and a-half cupfuls of fruit juice, boiled together rapidly from five to seven minutes. With these few preparations completed, one is ready for the making of some real cool drinks. Orange syllabub is an unusual milk drink, and is so nutritious and refreshing that it should be better known. Pour half a cupful of orange juice into the shaker or fruit jar, add half a cupful of beverage syrup or sugar, and one cupful of cold water, shake till well mixed, then add two cupfuls of rich milk, and continue shaking for a moment or two. Fold in half a cupful of whipped cream, and shake again, then serve frothy and chilly in glasses. Pink milk shake is always most popular with the children, and a welcome beverage for children’s parties. Make is by shaking together half a cup ful of cold water in six tablespoonfuls of strawberry or raspberry syrup, and one and a-half cupfuls of rich milk. When frothy and light, pour into small glasses, and top with a teaspoontul of whipped cream flavoured and tinted with the fruit syrup.

Mix with 3J glasses of milk. Sugar to taste. This is sufficient quantity to fill four full glasses.
