BAKEWELL PUDDING
This recipe has been handed down from the original maker: Line a tart dish with puff pastry and lay on it greengage jam or apricot jam. Melt a quarter of a pound of butter, add six ounces of fine granulated sugar and a few drops of essence of almonds. Stir into these ingredients five yolks and two whites of eggs, well beaten. Mix all together, and fill up the dish. Bake carefully for one hour in a moderate oven.
