FISH PYRAMIDS These may be made from any cooked white fish left over from a previous meal. Remove all bones and skin from the fish and flake it finely. Weigh, and to Jib. of fish allow of cooked rice or 41b of mashed potatoes. Mix them well, add the chopped yolks of two hard-boiled eggs and two oz. of grated cheese. Bind with a beaten up raw egg, season highly and pile the mixture in little heaps on a greased fireproof dish. Sprinkle each with the sieved yolks of the hard-boiled eggs and a few breadcrumbs. Put a small piece of butter or margarine on each, and bake in a fairly hot oven from 10 to 15 minutes, or until nicely browned and hot through. Serve hot. Note. —These may be prepared the previous day and put into the oven, just in time for breakfast.
