LIMOUSINE CAKE.

Ingredients.—Two pounds of chestnuts, two bars of chocolate, two yolks of eggs, and three dessertspoonfuls of fresh cream. Cook the chestnuts, peel them and pass them through a sieve. Melt the chocolate in a little. of the water in which the chestnuts were boiled. Then add the yolks and the cream. Work up the whole vigorously for 20 minutes. Place in a buttered mould. Cook in a bain marie (a double saucepan) for about 15 minutes. Ice the cake with chocolate if liked. This cake should be made the day before it is cut.
