HOME-CANNED TOMATOES
Sound tomatoes only should be used for canning. First put them into very hot water for a minute (this loosens the tough skin, which can then be easily removed), then pack them in wider-mouthed jars, fill each jar with cold water and add a teaspoon of salt, to each. Put on the rubbers, place the lids in position and stand jars up to their tops in cold water. Bring to the boil and continue boiling for 30 minutes, -when the lids should be screwed down tightly. Leave them in the boiler until the next day, then bring the water again to the boil and boil for another 30 minutes. See that the lids are screwed down as tightly as possible.
