DELICIOUS LEMON PIE

R.eally good short pastry with a delectable filling is always a popular sweet, and lemon pie comes into this category. For the filling you will require one good cooking apple, one lemon, one egg, one teacupful of Demerara sugar, and a piece of butter about the size of a walnut. Chop the apple finely, grate the lemon rind, then squeeze out the juice. Add the sugar and butter and the egg, well-beaten. Mix all thoroughly together. Then have ready sufficient short pastry to line an ordinary-sized sponge sandwich tin. Fill up your “lining” with the mixture, and bake till a golden brown.
