PURE FOOD.

All persons who make or eat cakes art

interested in a protest that lias originated in Otago, and will probably be endorsed throughout the Dominion. It is a« to the new regulations under the Sale of Komi and Drugs Act.

These regulations are now in force. One clause practically prohibits confectioners from using yolks ami albumen. Messrs A. Moritzson ml Co., of Dunedin, who import quantities ot

these goods, and supply a guarantee of purity (says the Star), have addressed a letter to the Hon. 11. H. Rhodes, in which they say; “Paragraph 30 allows only fresh eggs to be used. It does not say whether confectioners are to he allowed to use preserved eggs. If they are not, they may just as well close up, as they cannot get fresh eggs during the winter months. We further notice that the yolks of eggs and dry albumen are not allowed to be used, if the regulations are not modified in respect to these importations, the price

of eggs in Xew Zealand will rise at j any rate 3d per dozen, and pciapsj more. We are perfectly sure it is not the intention of the Government to raise the price of food, especially the price of eggs. We know that yon wish to increase the breeding of poultry and encourage the export of eggs. But it will be another 15 or 20 yeans before we can be at all successful in shipping eggs away in large quantities. The eggs which have been shipped did not pay, notw ithetandiug the paragraphs in the papers. We feel sure that after mature consideration you will not enforce the regulation as it appears at present. The time is not yet here for such legislation.”
