That the future of New Zealand’s dairy industry depends very largely upon

maintaining a very high standard of j quality is plain to every thinking person. At present the excellence of the butter sent to London from this dominion is the sole reason that it fetches the next best price to the Danish article, while Australian but-, tor does not find nearly such ready j acceptance or such good values. In the latter case manufactured butter-, substitutes comes a good deal into competition, and discussing the matter from the Victorian standpoint the , other day the Melbourne Argus speaks j rather plainly. In its outspoken comment the Argus points out that butters equal in quality to those supplied by Denmark feel very little competition from margarine, but Australia and Siberia are face to face with a rapidlygrowing adversary, and it adds: “Repeatedly advances in the price of butter were checked solely by the influence of margarine, and it became evident that there was a very clearly defined limit to the price at which Australian butter could be sold without a material increase in the consumption of margarine. The British grocer is entirely on the side of margarine, the sale of one pound giving him more profit than two of butter.” In New Zealand butter-makers and exporters would do well to note these remarks and to remember that quality must bo maintained. There is always room in the Home markets for produce of high quality and there is no reasonable possibility that we can ever send too much, providing it is really good. ,
