THE CHEESE MARKET.

Writing on February 21st 3 the produce correspondent of the London “Commercial Record” says:—A want of animation dominates the cheese

market, but the present cold weather! is not favourable for consumption, 1 which invariably declines under prevailing atmospheric conditions. The attempts to impart more firmness to prices have failed, the value of Colonial is down to about the level of last November. It is expected that extreme rates will, rule for fancy English, butj there is plenty of secondary [grades about, which are freely utilised by consumers. Canadian deep red has boon practically cleared, while fancy, quality is scarce, and will hold its own in value. Chief interest continues to entro round New Zealand cheese. Complaints have been numerous of late as to tho quality. There is such a large output in New Zealand this season, that many of the cheese makers are lacking tho experience to turn out goods in proper condition. There is evidently too much moisture in the cheese, which has not been properly pressed, or else defects have developed in the course of transit from the place of production. With continued large shipments from New Zealand, the anticipated increase of 25 per cent, over last year is being well maintained. At present, the quantities on the water are 60 per cent, in excess of last year,. but by the end of the ' month this large increase will bo modified by the subsequent arrivals, and shipments on the way. Reports as to dry weather in New -Zealand have exercised no effect upon the general situation. There appears no reason why there should he any alteration until tho start of the next Canadian season.
