“Whales caught in cold latitudes are certainly the better fish, but the same applies to all fish,” said a seafaring man to a Dunedin Star reporter in the course of a discussion about whal--1 ing and other sea pursuits. The difference due to climatic differences in temperature, in the edible qualities of fish, was said to be very noticeable even hi the case of blue ood caught in the Cook Strait sounds and those caught in Foxeaux Strait. The latter were the superior in quality and richness of flavour. The fish caught in cold climates kept longer, and that, it was asserted, accounted for the fact that fish caught at Stewart Island could be kept for a much longer period, than those caught on the plentiful fishing grounds at the Chatham Islands. An exception to the rule existed, however, in respect to fish caught at the Campbell Islands. Fish are very plentiful there, but, tfiey are so soft and pulpy in substance as to bo practically inedible. As the climate is cold there the fish should, on the contrary, be firm in fibre' and appetising r in flavour. The softness of those fish is. attributed ,to some peculiarity in their feeding resorts.
