EGG AND POTATO MORNAY Slice 3 or 4 cold boiled potatoes and place a layer in a well-buttered fireproof dish. Sprinkle the layer with pepper, salt, and a little minced onion. Cover this layer with slices of hardboiled egg, then a layer of grated cheese. Continue until dish is full, then cover with rather a thin white sauce well flavoured with cheese. Sprinkle over with breadcrumbs, dot with butter, and bake in moderate oven until well browned.
