LEMON CHEESECAKE. (To keep seven years.) To ylb butter put 11b lump sugar, broken small, 6 eggs (omitting two whites) ; the grated rind of three lemons and the juice of the same. Put all into a pan and simmer over the fire until the sugar is dissolved and begins to thicken like honey. When cool put into jars. HORSE-RADISH SAUCE. Boil an egg for 30 or 40 minutes. Take a half teaspoonful of mustard and mix carefully with the yolk of the egg, which contains sufficient moisture to bring it to a paste. Then mix in slowly the following ingredients —2 tablespoonfuls of cream, one of sugar and one of ivinegar. Grated horse-radish. N.B.—lf at all lumpy, seive before adding the last ingredient. GROUND-RICE CUSTARD. Three eggs, one pint new milk, 3 tablespoonfuls ground rice, two or three ounces white sugar. Mix the rice with a little of the milk, heating the remainder nearly to boiling point, with the sugar. Then mix with the rice, add the eggs (well beaten), and boil together over a slow fire, stirring until it thickens. Laurel leaves, essence of almonds or lemon-peel may be used as flavouring.
