A gentleman largely engaged in the produce trade in London, writing to the Australasian saj's —“ It may interest you to know that nine cases of green hacon arrived in London ex Riniutaka on the 29th April from Wellington, New Zealand. This is the first result of efforts made by a Jewish firm in London to get bacon from, the antipodes. Several of my customers have had this bacon, and they say it is fairly good in flavour, although rather too soft. The experiment, I fear, is not likely to pay immediately, as it will be difficult to get the proper sort of pigs for bacon in New Zealand without breeding. This always requires several years. I should think that, in any case, New Zealand bacon will only be able to compete with American bacon, and not with Irish, Danish, or Wiltshire. An important point, of course, is the cost of pigs in New Zealand. A bacon pig in England producing two sides of bacon each weighing about 561 b. is, in the living’ state, worth about 60s.
