DELICIOUS COFFEE

SIMPLE AND EFFECTIVE. A busy housewife often feels vaguely that coffee is too much trouble to make, yet here is a very quick and easy method of -making that takes no longer than tea. 1. Always use pure coffee —freshly ground if possible, or, at any rate, free from chicory, which gives it a treacly taste. If chicory is used never more than about two ounces to the pound. - 2. Use a warm eathenware jug. 3. TTse one dessertspoonful for each person. 4. As soon as water commences to boil pour it on to the coffee and stir once round. Wait three minutes and then pour backwards and forwards from cup to jug. Wait a few minutes longer when all the grounds will have settled, and the coffee is ready to serve. 5. 'Warm milk (not boil) and popr out milk and coffee together into the cups. A Luxury Touch.—lnstead of ordinary milk use unsweetened tinned milk only slightly watered. If you want your coffee extra nice prepare the tinned miik and pour it Into the coffee you have made and bring the mixture; almost to boiling point. The result will be creamy and delicious coffee.
