THOSE WINDFALLS
Small green ‘‘windfall” apples are often available and are very useful, though I have heard it remarked, ' Such small apples arc no use, for when peeled and cored there is nothing left.” Why peel and core them? Wash or wipe them, cut them in halves or quarters, atid put them into a pan with a couple of cloves or a piece of cinnamon, or strip of lemon peel. Just cover with watei*,. and 2oz. of brown sugar to lib. of fruit, simmer until tender, then pass the fruit through a sieve. Variation of Trifle —A plain* sponge pudding made of cut up sponge cakes soaked in a little sherry mixed with equal parts of water, may be covered with apple pulp and then with custard or clotted or whipped cream.
