Clean, scrape and wash tlie trout. Dry them well. Sprinkle oacli with a little tine salt.. Well butter the bars of a gridiron. Dip each trout in fine oatmeal. Lay a few at a time on the gridiron, and grill them over a clear, sharp fire for about five or six minutes according to their size. They must be turned at once. Then drain on paper and serve as quickly as possible. Slices of brown bread and butter, lemon, and cayenne should be handed with the fish.
