BUTTER-FAT VARIATIONS. DIFFERENCES IN COWS. Some cows give milk that is rich .n butter-fat, and the reason of this is that it is their nature to. Others give milk that is poor in quality, and has a bluish watery look. Here again, it is the cow's failing rather than her fault. The latter is often the cause of the quiet,' unperturbed type, which grazes sluggishly and drives unconcernedly from the,, •pasture field to the cow-house. She has no nervous activity and any food she gets she piles on her frame as beef, o r sends it to the production of an extra big, strong-boned calf. She is a breeder of calves rather than a producer of milk. Though she is -the same breed as her deep-milking byre mates, she is with them but not of them. Such, cows are passengers in a herd of dairy stock. Yet, but ior the testing system that would pass unnoticed, and the very fact that they pass unnoticed is often the cause >f getting milk vendors into trouble. The decisions may be just in some .3ases; in some they ..lay not. The fat percentage in milk, even from the same cow, shows wide variations; from a number of cows the same may happen. It may be an ■ineven assimilation of food, a lowering of the bodily faculties, a 'sudden drop in the temperature, or a dislike to a bad-tempered milker— any ,n e of these causes, or others not
•mown, may cause the milk of a cow lo fall much below the usual degree of richness expected in her milk. It is well-known that the first or fore milk of a cow is much poorer in but-ter-fat than the strippings or the last drainings of the udder; it is equally well known that tl > evening's milk is richer than the morning's milk, owing to the shorter period from morning to evening. Apart from these understood facts the variations in milk are hard to explain.
