FROZEN v. CHILLED
+ WHERE THE ARGENTINE IS GAINING. Frozen beef, as contrasted with the chilled article, seem? to languish more and more,, says a Home paper. So great has the- discouragement of the former business proved that in the past six months the total import into this country has been only 92,000 tons, as compared with nearly half as much again in the same period three years ago. Of this decline Argentine has experienced about a half, sending only 40,000 tons, as against 64,000 tons three years earlier. The River Plate seems to stake everything on the chilled trade these days. Curiously enough, the drop in New Zealand .frozen beef shipments has exceeded the decline from Australia, although the misfortunes of the latter country may have been more noisily voiced. The New Zealand, quota fell 21,000 tons in the period named, and Australian from 31,000 tons to 26,000 tons. Fortunately, this practice is fast disappearing, but,.it sometimes occurs where cream is forwarded daily to the factory. The cream lorry comes soon after the morning separation, and in order to get both separations away tho creams are mixed while the morning separation is still warm. "Junkety" cream often occurs.where this is done, and to obviate it the
morning cream should be cooled before mixing. If a cooler is not available for this purpose, by standing the can in a tub of water and stirring the cream briskly for ten minutes the temperature can be reduced sl'ghtly. Stirring the cream two or three times daily helps to maintain the cream in good physical condition and to liberate any gas which may form. If fthe cream is left standing for hours before stirring there is a tendency for the heavy portion (casein) to gradually settle towards the bottom and for the fat to rise to the top, especially if the cream Is inclined to be thinly separated. This is hot desirable, and stirring will pre-. vent it. A tinned steel or tinned copper stirrer should be used: on no account should a wooden stirrer be • employed for this purpose.,
