The winning recipe.is as follows: Take a large herring and scale and bone it. Boil an egg hard, chop it up while hot with a grating of cheese and a teaspoonful of anchovy sauce; season with pepper and salt and a squeeze of lemon juice. Spread the mixture inside the • herring, roll it up and tie with a thread. Then roll in oatmeal, brush over with beaten egg. Fry in boiling fat in frying basket for five or six minutes and serve hoit. Drain on paper before serving. "The rest of the recipes were or a surprisingly high standard,' 'said M.
