WHAT CAN BE MADE FROM MILK.

Some interesting figures have been compiled by the United States Department of Agriculture to show what 'can be made from a definite quality of milk. Using 100 pounds of milk which tests four per cent., it lias been found that this quantity will make 4.8 lbs. of butter eleven pounds of rheddar cheese, forty-five fifteenounce cans of condensed milk, 12.5 pounds of whole.milk powder, 8.5 pounds of Swiss cheese, or twentythree pounds of Camembert cheese. The exact amounts of these products that can be made from 100 pounds of milk varies with the richness of the milk in fat and other products.
