In reply to a request, the Minister: of Agriculture has furnished the following, as an accurate-statement of the system of marketing dairy; pro* duce in England. “ The system of marketing : Danish' dairy produce in Great Britain H ‘ briefly as follows:—There are about? 1400 dairy factories in operations in: Denmark. A few of these sell theor k produce weekly to firms in Great Bri-i tain. Another part is bought from* the dairies by Danish;-exporting firms. 1 often to standing orders week by week mostly f.o.b. Danish ports 1 . What-, butter remains unordered is generally consigned to wholesale houses InGreat Britain to be sold-on 1 commission. Other dairies have formed but* ter export societies, and these trade in just; the same way as the private ex-' porters. A number of these societies have formed an association for the purpose of securing the best possible prices, and also to improve quality and generally to further the interests of the societies. The fixing of weekly prices is carried out by the Copenhagen butter quotation committee.-. This committee meets each Thursday* and the basis of its deliberation is formed by reports from the varlousbutter markets, and very: largely , by the number and sizes of the orders?, received from customers af these mar—kets. If the demand- is above the average, the'quotation is increased ;< lf fewer orders have come in, It is lowered. The quotation is an attempt: to give weekly expression to the aver*, age price or value of Danish butter in the British markets. An error; made one week is made good the next. If, for instance, the price be fixed too high, orders fall off and the quotation is lowered next week, or vies versa."
