The Ashburton Mail flays harvesting operations at I ongbeach this season have been of their usual magnitude. Fifty reapers and binders have been at work almost continuously; about 60 drays and teams belonging to the estate, besides as many others as could be hired, making nearly 100, and upwards of 400 men,were engaged in actual harvest work. Gutting was finished yesterday, and the usuaj expedition is- being observed in thrashing and stacking. As many as 45 stacks have been in course of building at one time. As a whole the crops are good. Continental mutton recommenced to oome forward freely, and Home-billed motion has been plentiful till within the latt few days, while frozen mutton has only been supplied sufficiently for the requirements of the trade. As usual at this season the demand ia for beef in preference to mutton. The truth of the saying that the meat trade is essentially a weather trade, is at no period of the year more clearly demonstrated than during the week or ten days preceding Christmas, when a special supply comes forward as a matter of course. Unfortunately the weather this year has been especially mild and unseasonable, and the butchers have consequently been afraid to get in their stock, with the result that trade has bean very dragging. Average New Zealand cross-bred mutton has maintained ils price for many weeks past, better than any other meat. This is chiefly owing to moderate supplies being judiciously placed on the market. Also;that Australian merino mutton has come forward very freely, and that its cneapnesa has created a largely increased demand. New Zealand mutton of average quality still makes from 3*d to 3sd,but really prime carcases command per lb. Heavy or very light sheep are difficult to sell. Australian sheep of average quality continue to realise from 2Jd to 2|d per lb.
