POTATO FLOUR.

A NEW INDUSTRY, Mr James Ward, of Ashburton, has for some time past boon devoting his time to the productiion of potato fariua. This substance is exceedingly popular in Europe, aud meets with a ready sale at good prices. It is extremely nutritive and was largely used in the last war by the French army. Seeing the low price at which potatoes have been sold latterly, Mr Ward thought something might be done with them to render them available for export in a condensed form, and after months of experiments he has invented a process by which he can turn potatoes into a line flour that will keep for a long time, and can be sent all over the world. Last week he visited Professor Eickerton, who analysed the flour and gave him the following letter:—“ 1 have examined the sample of Potato Farina obtained from Mr James Ward, of Ashburton, and I find it exceedingly well prepared and quite free from adulteration. It may be used safely as a substitute for Indian corn Hour in puddings, blanc mange, &c. — (Signed) A. W. Eickerton, Colonial Analyst.—The Laboratory, Canterbury Cullege, 20th November, 1880.” Immediate steps will be taken to make large quantities of this article, which will no doubt find a ready sale.—“ Ashburton Mail.”
