'My fatty Valentine' doesn't quite have the same ring to it as the old song's lyrics, "My Funny Valentine." So heart-shaped chocolates are no longer the only choice of gift. If you're not mad about buying soft toys clutching red, satin hearts, or too uncertain to venture into a lingerie store, try expressing some passion — or even just a little caring — by baking your special someone these delightful "kisses". Coconut-macadamia kisses (Makes 18 servings) 3 egg whites at room temperature, pinch salt, 1/2 cup castor sugar 1 tspn coconut essence, 18 macadamia nuts, halved, 1/4 cup shredded coconut Preheat oven to 120°Celsius. Line baking tray with grease proof paper or foil. In medium bowl, with mixer on medium speed, combine egg whites and salt; beat until foamy. Gradually beat in sugar, beating until shiny and stiff peaks form when beater is lifted. Fold in coconut and coconut essence. Into pastry bag fitted with large star tip, spoon meringue mixture. Pipe 36 equal rosettes on prepared baking tray. Arrange half of a macadamia nut in centre of each rosette. Bake 40 minutes, until edges begin to dry and kisses are lightly browned. Tuni oven off. Let kisses dry in oven, about 3 hours or overnight, until crisp. Peel paper or foil from kisses. Store in airtight container. Each serving of two kisses provides 200 kilojoules, 3 grams fat and 0.5 grams fibre. Recipe taken from "The Weight Watchers Complete Cookbook and Program Basics."
