For young people especially, who may be looking for ways to spoil Mum on "her" day, eggs are an inexpensive, nutritious food that can be used simply in so many different ways. Eggs supply energy, appetite satisfaction and valuable nutrients - especially for Mums watching their diets! Whether a slimming diet be judged from a low-carbohydrate or a lowcalorie viewpoint, eggs are ideal as they are low in both. Following are some egg recipes which are neither too difficult or time-consuming to whip up for Mum on her special day. TOASTIES 4 thick slices of bread butter savoury spread (yeast extract, relish etc)' 4 eggs, hardboiled and sliced 4 slices of cheese, salt and pepper Toast bread on both sides, spread with butter and savoury spread. Arrange slices of hardboiled egg on top of toast, cover each with a slice of cheese. Grill until cheese melts

and browns. Serve hot cut into fingers or squares. Serves 4 BRUNCH EGGS 4 eggs I cup cottage cheese 1/2 tspn salt pepper 3 Tblspn chopped fresh herbs 1 Tblspn butter hot buttered toast Beat the eggs. Cook for 12 minutes each side. Drain on abgorbent paper and sprinkle with sugar/honey. May be served with lemon juice or fresh cream. EASY EGGS 400gonions 2 Tblspn butter 3 medium-sized capsicums 500g tomatoes 1 /4 tspn basil salt freshly ground black pepper 4 eggs

4 Tblspn cream | 4 rashers bacon/ I salami (optional) f Chop the onions, then | take out and throw 1 away the stalks of the | capsicums and cut 1 them into strips. Peel | the tomatoes by 1 pouring boiling water | over them until the | skin splits. Chop the | tomatoes, onions, | capsicums basil and 1 pepper to taste. Cover 1 the pan and simmer for 20 minutes. Beat the eggs lightly with the cream, and pour them over the vegetables in the pan. Cook them slowly, stirring all the time, until the eggs are lightly scrambled. Sprinkle lightly with salt, strand serve garnished with crumbled I crispy grilled bacon | (optional).
