Chefs create for competition

For two days last week five teams consisting of six caterers conjured up culinary delights for a panel of judges.

The five teams represented were 6 Composite Squadron from Papakura, 4 Composite Squadron from Waiouru,

10 Transport Squadron from Palmerston North, 2 Composite Squadron from Trentham and 9 Composite Squadron

from Burnham. The five teams comprising of six members, four chefs and two stewards, had been preparing for this weekend competition since March. Those participating are not

allowed to hold higher qualifications than those for Chefs London and City Guild 706/1 and, for the stewards, London and City Guild 707/2. On Saturday the starting time for the

chefs was 8.30am, with time allowed to prepare the five course luncheon set at 3.15pm. The menu consisted of Consume Julienne - a clear beef soup with Julienne vegetables, Turnpage 5

Patisserie - this was a dessert of the choice of the chefs flambed by the steward, and Angels a Cheval - Angels on horseback. During the preparation of both the hot and cold meals four instructors from the catering school were judging the chefs at work, as too were the stewards during their table preparation and

the flambeing of the dessert at the dinner tables. A number of invited guests were asked to partake of the meal while a panel of judges looked at the presentation of the meals. This year's judges were W02 Harvey Bourne, at present Chef at Government House; WOl Ian McClennan who works at RNZCT Directorate; Lt Owen Lloyd who is Senior Instructor at the Catering School in Waiouru, and Kevin Anderson, an ex-Army person who now works at Spotless Catering in Auckland. This year's winners of the Roy Smith Tro- ■ phy were the group from Trentham's 2 Composite Squadron. The Dave Murray Steward's Trophy was taken away jointly by 2 Composite Squadron and 6 Composite Squadron.
