TOWN MILK SUPPLY
JT is to the credit of all concer'ned. that sucli an early and earnest effort has been made to rectify the deficiencies that have been discovered in the town milk supply. The only people who have not been heard are the vendors, who are not responsible for the quality of the product but who are the recipients of all the complaints of householders. The maim cause of the trouble, it appears, is lack of manpower both in the milking sheds and in the collection and treating of the product. Strict standards of cleanliness in the milking process deteriorate never so rapidly as when two hands are endeavouring to do the work of four and speed does not make for security against lurking bacteria. The difficulty oCrnaintaining a supply of boiling water in 'times of power shortage is one that can be overcome by other means but that again mean! extra labour. However, there is no reason ivhy milk should not be kept cool from the time it leaves the shed to its delivery next morning, and it seems that attention to this detail will eliminate the risk of "hot milk" about which distributors as well as customers have complaine-d. Now that the subject has been well ventilated, and 'the remedies pointed out, j there ought to be an immediate I and permanent improvement in | the quality of the town milk supply at all seasons of the year.
