PARIS TURNS TO MILK. MECHANICALLY STERILISED. Paris is gradually becoming a city of milk drinkers, according to figures made public by the French State Railways. While the consumption of milk is increasing that of wine is decreasing. During 1931 35,000,000 litres of milk were consumed by the inh'ahitants of tbe French capital, this being an advance of 5 per cent. over the previous year. Eaeh Parisian consumes about 70 litres of milk each year; ten years ago the figures were 60 To protect the milk supply of Paris and to .prevent its contamination strict regulations are enforced by the Prefecture of the Seine. The milk is brought to Paris in special railroad cars, and is sterilised mechanically before being offered for sale.
