C00KERY CORNER MINCED VEAL AND MACARONI. Three-quarter of a pound of cold roast veal, 3ozs ham, pepper and salt, grating of nutmeg, 1 dessertspoon butter, 1 tablespoon gravy, 3 or 4ozs breadcrumbs, £lb niacaroni, 1 or 2 eggs. Mince the veal with the hani. Add seasoning and breadcrumbs and mix with enough beaten egg to bind and moisten. Have the niacaroni boiled in salted water, and line the bottom and sides of a buttered mould with it. Mix any macaroni left with the meat mixture. Fill the mould to the top with the mixture. Put a plate .on top of the mould and steam for one hour. Turn out and serve with a good graVy. BACON AND BROAD BEANS. Make a nice white sauce with butter, flour, milk, stock or water. Have the beans partly cooked (other vegetables may be used). Put the bacon, beans and sauce together, and cook till the beans are done, and the sauce has taken the flavouring of the bacon. STEWED PUKAKI. Hang for some time, then skin like a rabbit or hare, then stew very gently till quite tender. BATTER FOR FISH. Mix one beaten egg, and one cup of milk, salt and pepper to a smooth cream with 4ozs flour. DATE PUDDING. Half-pound of dates, 3ozs flour, 2ozs breadcrumbs, 2 tablespoons milk, 2 eggs, Ub suet, 2ozs sugar, pinch of salt. Stone and cut up the dates. Grate the suet finely. Mix dry ingredients. Beat eggs, add" milk, and mix all tqgether. Turn into a butter basin, tie a buttered paper over, and keep hoiling for two hours. NICE PLUM PUDDING. Two teacups raisins, 2 teacups flour, 2 teacups breadcrumbs, 1 teaspoon mixed spice, 1 teacup sugar, 2 teacups suet, 2 eggs, pinch of salt, milk to mix stiff. Mix the dry ingredients lj and stand a little. Add milk and I eggs last. Boil in a buttered basin I with greased paper over the basin for 'II 3 — 4 hours. This is a very reliable J recipe. |L
