A PERFECT CUP OF COFFEE.
These rules for making better coffee come from a leading expert connected with one of the largest importers of coffee in England: Always use rain water or soft water. Measure the water as well as the coffee. The proportions should be a heaped desertspoonful to each afterdinner cup. Guessing means poor coffee. Do not waste fresh coffee by addiug R to old grounds. Coffee grounds once "used can no more make coffee than ashes can build a fire. Do not boil coffee. It kills the flavour and makes it bitter. Use freshlvboiled water only. Grind your own coffee, and only suffieient for the moment. This 'is the best and simplest way to make coffee: Put your freshlyground coffee into an earthenware pot; pour in a measured quantity of freshly-boiled water; allow it to stay two minutes. Do not stir or shake. Then strain through a muslin folded to five thicknesses, pour into the coffee pot, and serve instantly.
